Pina Colada Cake

The piña colada, the famous and delicious cocktail originating in Puerto Rico, returns in the form of a recipe, this time in a delicious sponge cake.

We are not going to simply refer to making a simple dessert with this flavor, but we are also going to decorate it like a real piña colada: the cocktail inside a pineapple or coconut with a straw, to transport you to the Caribbean and enjoy the tranquility and beauty of its beaches.

The piña colada consists of rum, water or coconut milk, and pineapple. Our piña colada sponge cake will, of course, contain these delicious and refreshing ingredients, but transformed into a cake worthy of the most demanding sweet tooth.

We are going to divide this recipe in two, so you don’t mess around. On the one hand we will make the cake and on the other the decoration. Let’s do it!

Piña colada sponge cake recipe 

Ingredients:

  • A box of white cake.
  • Instant vanilla pudding.
  • Eggs.
  • Coconut milk.
  • Ron.
  • Vegetable oil.
  • Canned ground pineapple.

    Utensils

    • Large bowl.
    • Electric mixer with rods.
    • Circular molds of 15 centimeters in diameter.
    • Vegetable paper.
    • Plastic bags.

    preparation:

    1. In a large bowl, add the flour, a small envelope of vanilla pudding mix, 4 eggs, 1/3 cup of vegetable oil, 1/2 cup of coconut milk and 1/3 cup of rum. We beat everything very well with an electric mixer with rods.
    2. Once we have beaten everything, we will add 2/3 of a cup of canned ground pineapple. We will mix everything very well.
    3. Preheat the oven to 175ºC.
    4. Pour the mixture into two circular molds of 15 centimeters in diameter, greased or with greaseproof paper.
    5. Put them in the oven and bake for 50 minutes. Verify that they are done by inserting a toothpick in the center and checking that it comes out clean.
    6. Let cool to room temperature.
    7. Unmold the two cakes.
    8. Put them in separate plastic bags. Close them and put them in the fridge overnight.

    Decorate the piña colada cake

    The next day, we will decorate our piña colada cake, ideal for a Hawaiian or beach party.

    Ingredients

    • Whipping cream or whipping cream.
    • Grated coconut.
    • Pineapple in pieces.
    • Half a cup of coffee.
    • Grated chocolate or grated coconut and black food coloring.
    • Whipped cream.
    • Straws, umbrellas and cherries.

    Preparation

    1. On the one hand, beat 250 ml of cream until it is mounted. We will add the grated coconut and the chopped pineapple.
    2. In addition, we will beat 750 ml of cream until it is mounted and we will add half a cup of coffee.
    3. If we don’t want chocolate on the outside, we can opt for  grated coconut and black food coloring.
    4. We remove the two cakes that were in the fridge and cut the top part, where it has acquired a bulging shape. Therefore, both sides will be smooth and straight. We reserve the hat that we have cut.
    5. We join the two halves one on top of the other, and we will cut with the knife the upper edges of the cake above, so that it acquires a rounded shape, as if it were a real coconut.
    6. We turn the two piña colada cakes joined together and trim the edges the same.
    7. We can cut the top of one and cut a circle in the center, so that there will be one.
    8. We separate the two cakes and between one and the other, we will fill with cream, pineapple and coconut. We unite them. This same mixture will serve to glue the crown cap on top.
    9. With the whipped cream with coffee, spread the entire outside of the piña colada cakes, united and with the crown lid.
    10. Sprinkle with chocolate or grated coconut and black food coloring.
    11. At the top, in the center, add whipped cream until the hole is covered.
    12. We decorate with some straws, umbrellas and cherries.

    Advice:

    If you prepare the recipe for piña colada sponge cake you can put coconut milk and add one or two teaspoons of rum, or substitute the liqueur for flavoring, and in this way you can moisten the cake a little. This is optional.

    Although it may seem complicated to you, we assure you that it is very simple and that it will be worth it. Get the ingredients and succeed at family gatherings or any celebration with this original dessert.
