Potatoes and spinach take the place of meat in this recipe. It is about combining both ingredients to make a seasoned vegetable “meat”. You can even do without the hamburger bun, since the recipe contains carbohydrates (potato). And instead, take two lettuce leaves.

  • 4 medium potatoes
  • 1 ½ cup fresh, clean spinach leaves
  • 2 cloves of garlic, crushed
  • 1 Cup of onion cut into brunoise
  • ½ cup finely chopped parsley
  • ½ chives finely chopped
  • 2 tablespoons of soy sauce (20 ml)
  • 1 teaspoon of oregano (5 g)
  • 1 teaspoon of paprika (4 g)
  • 1 teaspoon of cumin (4 g)
  • 200 grams of breadcrumbs
  • 2 beaten egg yolks

Preparation

  • To start, place a pot with plenty of water on the fire. While the water reaches the boiling point, we clean, peel and cut the potatoes into irregular pieces. Cutting them  will make cooking faster.
  • Next, we poach the potatoes in the boiling water until they are soft when in contact with a fork or knife.
  • Afterwards, we take the spinach leaves, clean them and cut them very fine.
  • Make very fine cuts with the rest of the vegetables,  onion, chives, garlic and parsley.
  • After the potatoes are tender, we drain them and put them in a bowl, and with the help of a fork or a puree maker we begin to mash the potatoes. At this point, we add a dash of olive oil, a touch of salt and pepper. We continue to crush and conserve.
  • Next, we put a pan with oil on the fire and place the onion, garlic and chives until they crystallize. In addition, we add the seasonings: oregano, paprika, soy sauce and cumin. Finally, we add the spinach.
  • Now we add this sauce to the mashed potatoes, then the two beaten egg yolks and we begin to combine until we have a homogeneous mixture.
  • Afterwards, we moisten our hands a little and begin to make balls of two inches in diameter. Then we crush them between the palms of our hands.
  • Finally, we roast both sides of the potato and spinach burger in breadcrumbs and place them in plastic wrap.
  • We put them in the fridge to make them consistent.

Cooking the burgers

  • First of all, after an hour in the fridge, we take them out and proceed, either to bake them, fry them or our favorite cooking mode for hamburgers, to grill to maintain their juices. There you can marinate them with a dressing of flavored oil and fine herbs.
  • Now the fun part. Assemble the burgers with some fresh arugula leaves  or a mix of lettuce, homemade bread (optional), tomato rings and red onion, tomato sauce, homemade mayonnaise, Dijon mustard and a rich blue or matured cheese, for a gourmet touch . You could also add pickles or a rich guacamole to these potato and spinach burgers.
  • Finally, accompanied with potato chips or a fresh salad, they make a great lunch or family meal.
